Raw ready-to-eat fishery products
This advice supplements regulatory requirements and guidance contained within the Food Law Code of Practice and the Practice Guidance.
It is provided in response to various enquiries notified by local authorities (LAs) to the FSA through the hierarchy approach regarding the supply of sushi, sashimi and other RTE fishery products and their handling throughout the food chain.
It does not apply to live bivalve molluscs (LBM), live echinoderms, live tunicates and live marine gastropods.
