Salmonella
What is Salmonella food poisoning?
Salmonella food poisoning is usually caused by consuming food contaminated by Salmonella bacteria. There are approximately 10,000 cases of Salmonella food poisoning reported in England & Wales every year.
What are the symptoms?
Typical symptoms include: diarrhoea, vomiting and fever. Symptoms typically start within 12 to 72 hours after consuming contaminated food.
What are the sources?
Salmonella can be found in a variety of foods including:
• red and white meats,
• raw eggs,
• milk, and dairy products
The infection may be spread from person to person and can be contracted from sources other than food such as from domestic pets, especially reptiles.
How may Salmonella food poisoning be prevented?
The bacteria are easily killed by heat and so thorough cooking of susceptible foods will be effective. The bacteria will readily grow in warm food and so it is important to keep cooked foods cold or hot and protected from cross contamination by raw foods.
What should you do if you think that you have Salmonella food poisoning?
You should seek medical advice, without delay, to arrange for appropriate care and for a stool specimen to be taken. This will be important to confirm whether you have indeed been infected with Salmonella. If you suspect that your illness was caused by a food business you should also notify your
local Environmental Health Department to allow them to initiate an investigation. You should keep any remains of suspected food in your freezer for possible laboratory examination.
